Hassle Back Potatoes

Ingredients

  • 6 desiree potatoes

  • 2-3 tablespoons olive oil

  • Salt

Method

  1. Simply wash your potatoes, and cut slices approximately 0.5cm, ensuring you don’t cut all the way down to the bottom. I like to place a wooden spoon next to the potatoes lengthways, as a guide to make sure I don’t slice all the way through.


    Arrange the potatoes on a lined baking tray, and brush generously with olive oil. Sprinkle with salt, and bake in a 200°C oven for 30 minutes.

  2. Take out of the oven, and brushed the potatoes again with the excess oil at the bottom of the pan, ensuring you get the oil down the potato crevices.

  3. Place back in the oven, and check again in 15 minutes. Baste again, and then cook for an additional 15 minutes, or until the potatoes are golden.
